Ingredients: 1 fresh black truffle or in oil; 5 eggs; extra virgin olive oil q.s., grated Parmesan cheese; sale.
Procedure: Break the eggs into a bowl and beat them well a few minutes. Add salt, Parmesan and truffle flakes or grated. Stir to combine ingredients and pour into a pan in which a drizzle of extra virgin have previously heated. Let cook a few minutes and turn the omelet to cook the other side. Serve hot.
